Ingredients

Hara Masala – Green Spice

  • 18 – 20 mint leaves
  • a handful of fresh coriander leaves
  • 5 – 6 green chilies
  • 1 medium sized onion
  • little bit water

Ingredient needed to marinate the chicken

  • 1 kg Chicken
  • salt to taste
  • whole spice mix
  • 1 tsp crushed cumin seeds
  • 1 1/2 tbsp Homemade Biryani Masala
  • 1 1/2 tbsp Crushed garlic
  • 1 tbsp Crushed ginger
  • Green Spice (ingredients listed above)
  • 2/3 cup yogurt

Other ingredients

  • 1/2 cup oil
  • 750 g rice
  • coriander leaves
  • fresh / dried mint leaves
  • green chilies as desired
  • tomato slices as desired

  • cup oil
  • 1 bay leaf (tez patta)
  • ½ piece cinnamon stick (darcheeni ka tukra)
  • ½ star anise (badiyan ka phool)
  • 1 black cardamom (bari elaichi)
  • 8-10 black pepper corns (sait kali mirchain)
  • ½ tsp cumin seeds (zeera)
  • 1 large sized onion
  • ½ kg chicken
  • tbsp ginger and garlic crushed into paste form
  • salt to taste
  • ½ tsp black pepper
  • 1 tsp white pepper
  • 2 crushed green chilies
  • 1 tsp coriander powder (dhania powder)
  • ¼ tsp nutmeg & mace powder (jaifal jawetri)
  • 1 tsp biryani masala (you can also use home made biryani masala)
  • 250 grams yogurt (dahi)
  • ½ kg boiled basmati rice (ublay basmati chawal)

Garnish with

  • 2-3 green chilies
  • 8-10 mint leaves
  • 2-3 tbsp fresh coriander leaves

Marination of chicken

  • ¼ tsp saffron (zafran) mixed with 4-5 tbsp of milk
  • 3 medium sized fried onions
  • 1 cup yogurt yogurt and onion are blended together into liquid mixture
  • 1 kg chicken
  • 1 tsp salt to taste
  • tbsp biryani masala
  • ¼ tsp turmeric
  • 1 tsp red chili powder or to taste
  • 1 tsp coriander (dhania)
  • 1 tsp crushed cumin seeds (zeera koota hua)
  • 2-3 crushed green chilies
  • 2 tbsp ginger garlic crushed together into a paste form

Other ingredients

  • 2-3 cup oil or as required
  • 6-8 dried plums (sukhe aloo bukhara)
  • 2 medium sized potatoes
  • 750 grams boiled sella rice
  • 2-3 tbsp saffron milk mixture

  • 6 to 8 black pepper seeds (8 adad kaali mirchain)
  • 1 tsp cumin seeds (zeera)
  • 2 to 3 cloves (2 se 3 adad laung)
  • ½ star anise (adha badiyan ka phool)
  • 1 tbsp garlic ginger paste
  • 3 tomatoes

This recipe assumes that you already have Seekh Kababs stored in your freezer for cooking this Malai Seekh Biryani. However, if you haven’t got seekh kababs already made and stored. You don’t have to worry about it because we have already got a Seekh Kabab recipe for you.

When Seekh Kababs are already available in the ingredients list then start preparing Malai Seekh Biryani. Here is the list of ingredients and step you need to follow to make this recipe work for you.

Malai Seekh Biryani

Ingredients

White Gravy

  • 1 cup mayonnaise
  • 150 ml cream
  • ¼ cup almond paste (badam ka paste)
  • 1 cup water

Malai Creamy Gravy

  • cup oil
  • 1 – 2 bay leaves (tez patta)
  • 1 piece cinnamon stick (darcheeni ka ek tukra)
  • 2 green cardamom (hari elachi)
  • 8 – 10 black pepper corns (sabit kali mirchain)
  • 2 – 3 cloves (laung)
  • 2 onions medium sized
  • ginger garlic paste
  • ½ tbsp cumin seeds
  • 1 tbsp white pepper powder (sufaid mirch powder)
  • salt as per taste
  • 2 tbsp green chilies paste (hari mirchon ka paste) or as per taste
  • 1 tbsp biryani masala you can also use home-made biryani masala
  • 1 cup yogurt

Other ingredients

  • 1 kg Basmati Rice already boiled
  • Kewra Essence Kewra water, also called kewra essence or kevda water, is a fragrant floral water which is extracted from the flowers of Pandanus tectorius.

Instructions

  • Take a bowl and squeeze out 1 cup of mayonnaise and add 150 ml cream and ¼ cup of almond paste. Then add about 1 cup of water and mix it with a whisk or other mixing tool. Keep it aside.
  • Then warm the frying pan over a medium heat and add ⅔ oil and blend of ground spices as per detail given in the ingredients (also see picture below). Let it fry for few seconds.
  • Add onion and cook on low flame until onion becomes soft lightly tinged brown. Then add ginger garlic paste and fry on medium flame for 2 minutes more.
  • Add cumin seeds, seasoning of white pepper powder and salt, green chilies paste and biryani masala. You can also use a home-made biryani masala. Stir to mix and then add 1 cup of yogurt.
  • Stir continuously on medium to high flame until oil is separated.
  • Now is the time to add the mayo mixture you set aside earlier. Stir well and cover with pan with its lid. Cook on low flame for at least 5 minutes.
  • Next grease the vessel (patila) with little oil and turn over in it already boiled Basmati rice in it making a base layer.
  • Pour the creamy gravy over the base layer and add another layer of rice and then gravy and repeat the process until you end up with the gravy on the top. Arrange your favorite seek kababs on the top and garnish with mint (podina) and coriander leaves (dhania).
  • Cover up with last layer of rice and pour ¼ tsp of Kewra water (essence). Lastly garnish with fried onion, green chilies, mint and coriander leaves. Cover with the pan with its lid for steam cooking (dum).
  • Steak cook for 15 minutes. Feast on the creamy seek biryani.

Ingredients

Ingredients required for marinating fish

  • 1 tbsp Ginger Garlic paste (Lahsan Adrak ka paste)
  • 1 tsp Red chili powder
  • 1 ½ tsp Coriander Crushed (Dhania Koota Hua)
  • ½ tsp Crushed Cumin seeds (Zeera kota hua)
  • ½ tsp Whole Spice Powder (Garam Masala Powder)
  • 1 tsp Fish masala
  • Salt to taste
  • 1 tbsp Lemon Juice
  • 1 tbsp Yogurt
  • 750 grams King Fish (Surmai Machli)

Gravy Ingredients

  • 3 pieces Onion medium sized
  • 1 tbsp Ginger Garlic
  • 1 tbsp Cumin seeds
  • 1 cup Water
  • 1 tbsp Green chilies crushed
  • 1 tsp Red chili powder
  • Salt to taste
  • 1 – 2 tbsp Biryani masala (you can also use home made biryani masal)
  • 1 tsp Dried penugreek leaves
  • ¼ cup Yogurt
  • 3 pieces Tomato blend tomatoes beforehand

Other ingredients

  • 750 grams Basmati Rice Boil rice beforehand with salt and whole spice mix.
  • Orange food color as required
  • Fresh coriander as required
  • Mint leaves as required
  • Green chilies as required

Instructions

Marination of king fish

  • Add all the ingredients listed above for marinating the fish in a bowl. Mix them thoroughly to make a paste of masala.
  • Place the nicely cleaned fish pieces in a tray or a plate and apply the masala paste on both sides of the fish. Marinate for 30 to 40 minutes.
  • Heat up ⅔ cup oil and fry the fish pieces on low to medium flame until golden brown from both sides. Change sides so that the pieces wont burn up. When ready take out and keep aside.

How to make Gravy

  • In the same pan, use the left over oil to fry 3 medium sized onions until light golden brown in color. Add 1 tbsp ginger garlic paste, 1 tbsp cumin seeds and fry them for few more minutes.
  • Add ½ water cup water and cook on low flame until onion becomes soft.
  • Then add crushed green chilies, red chili powder, salt to your taste, biryani masala, dried Fenugreek Leaves (Kasuri Methi) and yogurt. Stir and cook on high flame for 2 – 3 minutes.
  • Meanwhile, blend 3 tomatoes. Add into the gravy and cook on medium flame until liquid dries and oil separates. Turn off the flame.

Rice

  • Now grease vessel with oil and make a base layer of already boiled rice.
  • Flow down some gravy and add cover up with another layer of rice. Add some more gravy on the top and garnish with orange food color (zarda rang).
  • Decorate with fresh coriander, mint leaves and some green chilies.
  • Lastly, place over the fried fish peaces on the top and steam cook on low flame (dum) for 15 minutes. Ready to serve.

For marinade

  • ½ Kg Chicken
  • 2 tbsp Ginger Garlic paste (Lahsan Adrak ka paste)

  • 1 tsp Red Chili powder (Lal mirch)
  • 2 tbsp Homemade biryani masala
  • 1 tbps Coriander (Dhaniya)
  • 1 tsp Cumin seeds (Zeera)
  • 1 piece Onion large size fried and crushed
  • 1 cup Yogurt (Dahi)

Instructions

  • Add all the ingredients of the marinade listed above and mix them together.
  • Marinate for 30 minutes
  • Add ⅔ cup of oil and cook the marinade on low flame until the chicken is done..
  • Grease an other Patila with little oil. Meanwhile, boil the ½ kg of Basmati rice with salt, green chilies and whole spice mix. Then make a first layer of rice in the greased pan, second layer of chicken curry with slices of 1 large sized tomato. Make a third layer of rice along with slices of 1 to 2 pieces of boiled potato.
  • Decorate further with slices of 1 to 2 pieces of boiled carrot and peas as required. Make a final layer of rice and pour saffron and orange food color mixed in milk. Apply coriander, mint leaves, chopped green chilies and fried onion.
  • Cover the pan for 15 minutes on low flame and then you can serve it with sliced boiled egg on the top..

Fish Biryani

Ingredients

For Fish Marinade

  • 700 grams Fish
  • 1 tbsp Lahsan Adrak paste (Eng: Ginger and Garlic Paste)
  • 1 tsp Kasuri Methi (Eng: Dried Fenugreek leaves)
  • 1 tsp Red chili powder
  • 1 tsp Zeera Koota Hua (Eng: Cumin seed crushed)
  • 1 tsp Dhania Koota Hua (Eng: Coriander seeds crushed)
  • ½ tsp Chaat masala
  • ¼ tsp Garam masala powder Whole Spice powder
  • Salt to taste
  • ¼ cup Dahi (Eng: Yoghurt)
  • ¼ tsp Haldi powder (Eng: Turmeric powder)

Biryani

  • 2 pieces Onion (fairly large in size)
  • 2 tbsp Adrak Lahsan (Ginger and Garlic paste)
  • Whole spices mix (Sabit Garam Masala)
  • 2 tbsp Homemade Biryani masala
  • Red chili powder as required
  • salt to taste
  • ½ cup Yogurt (Dahi)
  • ¼ cup Tamarind Juice (Imli ka ras)
  • 750 grams Rice

Instructions

Rinsing with clean water and salt

  • Spread few pinches of salt on sliced pieces of fish, keep aside for 10 minutes and rinse it with water before marination.

Marinade Formation

  • Place the fish pieces in a bowl
  • Marinate the mixture for 30 to 40 minutes.
  • Heat up the oil and fry fish pieces on medium flame until it gets goldish brown from all sides. Then take it out and keep aside.
  • Take ⅔ oil already used in frying the fish for frying the 2 large sized onions nicely sliced in a separate pan. Fry until it gets to light golden in color. Add ginger garlic paste and who whole spices mix.
  • Fry for at least 2 minutes.
  • Add yogurt and tamarind juice and then cook on low flame for 3 – 5 minutes.
  • Grease separate pan with oil and add layer of rice boiled along side. Pour the curry with additional layer of rice. Add some ,more curry and spread fresh coriander, mint leaves and sliced green chilies. Add a final layer of rice and spread orange food color. Decorate the fried fish piece on the top and add some more coriander + mint leaves and green chilies. Also pour some drops of Kewra water.
  • Cover the pan for 12 – 15 minutes and serve it.
